Spooky Pumpkin Spice Cookies
Halloween is just around the corner, and what would the spookiest time of the year be without some deliciously spooky treats? These Spooky Pumpkin Spice Cookies are the perfect baked goods for Halloween. So, grab your mixing bowl and create your own sweet little ghosts!
Ingredients cookies:
- 120g spelt flour
- 80g yogurt butter
- 75g date sugar
- 50ml plant-based milk
- 3 tbsp pumpkin puree
- 1 tbsp pumpkin spice
- 1 tsp baking powder
- 1 tsp vanilla sugar
Ingredients topping:
- 200g cream cheese
- 60ml maple syrup
- 1 tbsp pumpkin spice
- marshmallows
- candy eyes
Instructions:
1. Preheat the oven to 160°C (fan setting).
2. In a large bowl, mix whole spelt flour, date sugar, baking powder, pumpkin spice and vanilla sugar well.
3. Add the soft and diced yogurt butter along with the plant-based milk and pumpkin puree to the dry mixture. Knead everything into a smooth dough.
4. Shape 8-10 cookies, place them on a baking tray lined with backing paper, and gently flatten them.
5. Bake the cookies for about 12-15 minutes until they are golden brown.
6. While the cookies cool down, prepare the topping. Mix the cream cheese with maple syrup and pumpkin spice until smooth.
7. Spread the cream cheese topping on top of the cooled cookies and use marshmallows and candy eyes to decorate them as little ghosts.
