Pumpkin Spice Cake with Cream Cheese Topping
Autumn has arrived, and with this season comes the perfect time for cozy baking afternoons. What could be better than a moist pumpkin cake with pumpkin spices? This cake is not only easy to make, but it’s also a true explosion of flavors. The delicious topping is the highlight of this baking creation.
Ingredients for the cake batter:
- 250g whole wheat spelt flour
- 250g natural yogurt
- 125g pumpkin puree
- 100g grated walnuts
- 70g date sugar
- 60ml maple syrup
- 3 eggs
- 4 tsp pumpkin spice
- 2 tsp baking powder
Ingredients for the topping:
- 200g cream cheese
- 60ml maple syrup
- 3 tsp pumpkin spice
Instructions:
1. Preheat oven & prepare baking tin
Preheat the oven to 160°C (fan). Line a loaf baking pan with baking paper or grease it.
2. Prepare batter
In a large bowl, beat the eggs with date sugar, natural yogurt, pumpkin puree, and maple syrup until fluffy. Add grated walnuts, whole wheat spelt flour, baking powder and pumpkin spice. Stir everything together until a smooth batter forms.
3. Bake cake
Pour the batter into the prepared baking pan and bake the cake for about 30 minutes at 160°C. Check with a toothpick to see if the cake is done – if it comes out clean, the cake is ready.
4. Prepare the topping
While the cake cools down, prepare the topping. Mix cream cheese, pumpkin spice and maple syrup into a smooth cream. Once the cake has cooled, spread the topping generously over the cake.
