Pumpkin Spice Power Bites

Autumn is knocking on the door, and with this season comes the time for everything that smells of pumpkin spice. These Pumpkin Spice Power Bites are the perfect snack to celebrate autumn – ideal for a quick bite in between. This snack combines the flavors of pumpkin spice, sweet dates and nuts. A delicious treat!

Ingredients:

  • 150g date paste or dates (soaked & chopped beforehand)
  • 130g oats
  • 125g pumpkin puree
  • 100g nut butter
  • 50g grated walnuts
  • 3 tsp pumpkin spice
  • 1 tbsp vanilla agave syrup
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • topping: 100g dark chocolate and 1/2 tsp cinnamon

Instructions:

The preparation of these Pumpkin Spice Power Bites couldn’t be easier. It all starts with the dates, which form the base for the sweet and sticky texture. Place the dates in a large bowl and add pumpkin puree. Mix thoroughly until the mixture is smooth.

Next, add the nut butter, walnuts and oats. Then, sprinkle the chia and flax seeds into the dough – these add more texture to the bites. For the perfect autumn flavor, add pumpkin spice and vanilla agave syrup. Once everything is well mixed, form small balls from the dough.

For the topping, melt the dark chocolate, then add cinnamon. Now you can coat the bites with the melted chocolate.

Place the bites in the refrigerator for at least 30 minutes. Once they have chilled, they are ready to delight you with their mix of sweet, spicy, and nutty flavors – the perfect energy boost for any autumn day!
